Easy chicken picatta

brown on each side 3 minutess. Remove from pan, add sprinkle of flour to the browned bits and butter to loosen bits. When paste is formed, add chicken broth slowly and lemon juice - about 1 cup total together. Allow to bubble, add chicken back in and simmer for 3 - 5 minutes. Add capers. Serve over angel hair pasta with steamed broccoli.
This easy meal will please the whole family. It is quick, easy and nutritional. You can make a lowfat version by omitting the butter, but use a little plain yogurt in the end once you deglaze the pan to thicken the sauce. Not too much as you don't want the yogurt to overpower and flavor the sauce, just thicken it. Add a little extra lemon if you like it particularly tart.
Don't forget the capers! It's not chicken piccata without capers.
